Introduction

Mkate wa sinia – Rice Coconut Cake 

Ingredients

  • 2 cups rice. Soak the rice overnight.
  • 1 tablespoon yeast
  • ½ teaspoon cardamom
  • 2 cups coconut milk
  • 3/4 cup sugar. You can add more or less to suit your taste

Step by Step Instructions

Step 1

Drain the rice and put in a blender along with all the other  ingredients.

Step 2

Blend into a smooth batter and pour into a medium bowl.

Step 3

Cover with plastic paper and set aside in a warm place for it to rise.

Step 4

Once risen, mix it well with a wooden spoon. 

Step 5

Grease your baking dish, pour the batter into and and place the dish on top of the stove.

Step 6

Cook it on top of the stove at low to medium heat for about 10-15 minutes or until the bottom is cooked. Make sure the heat is not high or else the cake will burn.

Step 7

After 15 minutes, place the cake in the oven.

Step 8

Bake at 200°C for 25-30 minutes, until the mkate is golden-brown.

Step 9

Once ready, remove from the oven and cover the cake to cool it down.

Step 10

Once cooled, carefully remove from the baking dish and cut into pieces.

Step 11

Serve with tea. Enjoy!
